Last night we were invited to dinner at some very dear friends' house.

I offered to bring some nibbles and, in line with my desire to eat healthily (and entice my kids to do the same), I decided to take along a platter of carrots, celery, cherry tomatoes, dolmades, olives, a few smelly cheeses (one has to have a small indulgences!..... and as they are gluten and sugar free, I saw no issue), some biscuits, and of course, one of my favourites - my homemade Capsicum and Parmesan dip. Its quick and easy to make, delicious and everyone loves it.

Ingredients:
4 fresh, baby red capsicums
100g parmesan
100g walnuts
2 T extra virgin olive oil
1 small red chilli

Blend all ingredients (my Breville smoothie maker does this, perfectly), serve and enjoy.

We all had a fabulous time (and the dip was loved by all).

 

 

 
 
To me, an ideal weekend is had when spent creating relaxed, happy memories with family, close friends, tasty (healthy) food and exploring our beautiful countryside.
